Our 2018 The Cutting Shiraz is the perfect example of an elegant style of single vineyard Barossa Valley Shiraz. The wine was carefully crafted from handpicked grapes, using gentle extraction and winemaking methods to ensure that our unique vineyard site resonates in every sip. On the nose this Shiraz displays aromas of blueberries, mulberries, hints of liquorice and subtle spice notes. The palate has a luscious texture with a well-rounded tannin structure making it a very drinkable modern style of Barossa Shiraz.

The Tasting Note

Our 2018 The Cutting Shiraz is an elegant style of single vineyard Barossa Valley Shiraz. The wine was carefully crafted from handpicked grapes sourced from our single vineyard Barossa Valley site. We use gentle extraction and winemaking methods to ensure that our unique vineyard site resonates in every sip. This Shiraz displays aromas of blueberries, mulberries, hints of liquorice, and subtle spice notes. The palate has a luscious texture with a well-rounded tannin structure making it a very drinkable modern style of Barossa Shiraz.

The Vineyard

Planted in 1998/99 the Cutting vineyard sits on a hilltop site in the Stone Well subregion of the Barossa Valley. The vineyard has an elevation of 265 meters and is planted on a North Easterly facing slope. The prevailing South Easterly wind provides the vines with a cooling relief during the extreme heat in January and February. A multitude of soil types adds to the complexity of the grapes produced. The dominant soil is a red sandstone littered with buckshot ironstone and runs over a limestone base of both rock and schist. We hand prune and shoot thin to maintain vine balance.

The Vintage

The 2018 growing season provided good winter rainfall, a dry spring, and then hot conditions through January and February. February’s extreme heat slowed down ripening due to the vine shutdown. The slightly above average crop in 2018, meant the grapes could slowly develop flavour without rapid sugar accumulation. A beautiful season resulting in quality grapes.

The Winemaking 

We handpicked the Shiraz grapes and crushed them in our on-site micro-winery. We retained 25% whole bunches to add complexity and perfume to the final wine. The fruit was cold-soaked for 7 days to gently extract colour and flavour from the skins. At the end of fermentation, we separated the skins from the wine using a basket press. We transferred the wine directly into French oak for the completion of malolactic fermentation. Matured in a combination of new and old French Oak for 20 months. Bottled without filtration or fining to ensure absolute freshness and purity of fruit.

The Food Match: 

This Shiraz pairs well with Italian meat or pasta dishes, tomato or mushroom-based vegetarian dishes, and subtly spiced meat.
