The Vineyard

The Cutting Vineyard is a stunning hilltop site located in the Stone Well sub-region of the Barossa Valley.  The site boasts an elevation of 265 meters and a moderate North Easterly-facing slope. Our vineyard benefits from the prevailing South Easterly wind, which provides much-needed relief during the scorching January and February heat.

With several soil types to draw from, our grapes are imbued with a complexity that truly sets them apart. The predominant soil is a red sandstone peppered with buckshot ironstone, running over a limestone base of both rock and schist.

Our vineyard was first planted in 1998/1999, and our team has been dedicated to meticulous hand-tending ever since. The result is a harvest that is as exceptional as it is unique.

The Season

The 2021 growing season was relatively uneventful. Cooler than average conditions prevailed throughout January and February, with only one day above 40 degrees – seemingly unheard of in recent seasons in the Barossa Valley. As the season appeared to be closing out in late March, there was a late burst of warmth to allow full flavour development from the generous hang time.

The Winemaking  

The grapes were handpicked and destemmed with 20% retained as whole bunches. The juice underwent a cold soak for 5 days followed by fermentation in open-top fermenters. After fermentation, we basket pressed the wine directly into seasoned French oak barrels. After completing malolactic fermentation, we racked off the gross lees and aged the Shiraz in oak for 18 months before bottling, without any fining or filtration.
