Our name, The Cutting, nods to a distinct feature on Stonewell Road—a visible cut from its construction. It exposes the soil layers where our vine roots seek water in our arid climate.

Our renowned Shiraz owes its perfumed complexity and rich textures to our diverse soils of limestone, ironstone, clay, schist and quartz.
