Our winemaking process emphasises our three single-vineyard Barossa Valley sites. We use gentle extraction methods in the winery, such as cold soaking, hand plunging, and incorporating whole bunches. These techniques infuse our wines with energy and freshness, enhancing their structure and complexity. We use a basket press to gently separate the skins before transferring the wine directly to seasoned French oak barrels for maturation. Bottling without filtration captures the fruit’s freshness and purity in every bottle.

Harsh Conditions Often Lead To Great Things
Every grape is handpicked in the cool mornings, preserving their freshness and purity. Located just 52 meters from the vines, our winery ensures a seamless journey from vineyard to bottle.
The Cutting Shiraz is sourced from our home block vineyard, located on a hilltop site in the famed Stone Well region of the Barossa Valley. At an elevation of 265m, the vines are cooled by a south-easterly wind, offering relief during the heat of summer. The different soils – visible along the exposed cut on Stone Well Road – add to the complexity and depth of our Shiraz.
The Outlier range features two exceptional wines—an award-winning old vine Grenache, hand-crafted from vines planted in the 1940s, and single-vineyard Cinsault, an alternate variety with sustainable low water needs that shows great promise in the Barossa. The grapes for this range are sourced from neighbouring vineyards. Created in a lighter style, these wines spend a shorter period in oak, are released earlier, and are best enjoyed slightly chilled.
